This last week has been a bit mixed up – a meal planning fail… Monday saw my best friend’s birthday and she came to spend the day with us, which was lovely. She helped to pick O up from school, which was a real treat for him! We had a special birthday tea for her of pepperoni pizza – O’s favourite. It was super scrummy! I made a double batch of Diet Cola chicken, so that we could freeze 4 portions for the post-birth period which will come in handy now I’ll be 38 weeks pregnant tomorrow. I also made a beef stew with dumplings which was really yummy and so enjoyed, I’m going to make the same one night this week too.
I cooked a whole chicken in the slow cooker yesterday for a Sunday dinner-style meal, and I plan to use the leftover meat to make a Chicken and Vegetable broth. This will give us something a bit healthier to eat at lunchtimes rather than the sandwich and crisps we have been having… So, this week we’re eating:
Monday – Chilli Con Carne with Rice
Tuesday – Beef Stew with Dumplings
Wednesday – Sausages and Mash with Vegetables
Thursday – Pasta Bolognase
Friday – Italian Bean Stew
