Meal Planning Monday 17/2016

Another week has passed!  I haven’t had much chance to blog this last week after three nights flying solo whilst hubs was away with work.  O has been a star all week, and Q managed a couple of really good nights with only one or two get ups.  Unfortunately, I can’t say the same for the rest of the week!  We’ve had a lovely busy weekend too – seeing lots of family, playing outside and spending most of Sunday either in church or in the company of the Priest, sorting out arrangements for Q’s baptism.

We had some of hub’s family over for dinner last night and the boys had such a great time.  Q loved all the attention he was getting from his big brother and cousins!  We cooked a Roast Pork joint with vegetables which was so scrummy.  The kids enjoyed Trifle for pudding and us grown-ups had the choice of Lemon Meringue Pie or Black Forest Gateaux, courtesy of Sainsbury’s frozen foods aisle!  It went down a treat.

It’s my birthday on Wednesday and so I’m out for lunch on Wednesday afternoon with my bestie.  Hubs is also treating me to lunch out on Thursday, so I’m trying to keep dinners light this week!  I’m hoping that hubs will get one of my cook books out of the loft so that I can make myself a rather swish birthday cake…  Full of calories and plenty of chocolate but you only turn 28 once!

Monday – Grilled Salmon Tabbouleh

Tuesday – Gammon with Fried Egg, Tomatoes and Mushrooms

Wednesday – Peppered Mackerel with Jacket Potato and Salad

Thursday – Moroccan Chicken with Cous Cous

Friday – Ham Salad with Baked Potato
