I completely forgot to share last weeks meal plan – our first one this year! Oops! We had some lovely meals, including some Santa Maria Pulled Pork tortillas which were really yummy. Last night, we tried out a new recipe of Quick Sausage Stew with fresh crusty bread. Hubs and I both really enjoyed it, but O wasn’t so keen on the sauce and chickpeas. You can’t win them all! I did convince him to try it, at least, so that’s a start.
This week, hubs is away one night but other than that it’s a pretty normal week. We’re still counting calories using the My Fitness Pal app and I’ve managed to lose 6lbs in a fortnight which I’m very happy about! I’ve got about a stone to go before I’ll be really happy with my weight, but I’ve made a good dent in my goal. So our menu this week looks like:
Monday – Harissa Chicken with Bulgar Wheat Salad
Tuesday – Beef Stroganoff
Wednesday – Chilli Con Carne with Rice
Thursday – Gammon with Baked Potato and Vegetables
Friday – Freezer Surprise
