Wow! What a weekend! If you’re a regular reader, or follow me on Instagram/Twitter, you’ll know that last week I was poorly with shingles. I didn’t get around to posting on the blog much and didn’t have much of a meal plan either! I cobbled together a weeks worth of meals with portions of leftovers from the freezer and easy-to-cook products from Asda to throw straight in the oven with no preparation. Come Friday, I was feeling a bit better and now I’m almost there. Normal service resumes!
We had a great weekend, seeing a lot of family and making some exciting decisions! On Saturday, I had our grocery shopping done by 9am and O scored 3 goals at his football practice – well done, O! We saw my mum in the afternoon and O and I baked some amazing chocolate chip cookies. On Sunday, we got sorted early doors – I baked a batch of my chocolate brownies ready for our Sunday dinner and we went off to DFS to look at a new suite for the lounge. We placed an order to be delivered before Christmas (yay!) and came home in time to cook dinner. A’s sister, brother-in-law, Nanna and our two nieces came for dinner with us and it was lovely to all be together! I made a rather excellent roast pork dinner with crackling (drool) and homemade Yorkshire puddings, and the kids enjoyed sausages with their vegetables. The chocolate brownies went down a storm with some Cornish ice cream – it really couldn’t have been better!
So, onto this week. Wednesday is a day this week that hubs is staying away with work, so I’ve opted for an easy tea for O and I. Same with Friday, but hubs is out with his friends so we’re having another easy tea. The rest of the week, I’m making options that have leftovers for lunch too. I’m also making a batch of soup today with the leftover vegetables from yesterday’s dinner and adding a bit of stock and a few extra parsnips.
After a week off calorie counting, thanks to being ill, I’m getting back into it this week with plenty of healthier options whilst still accounting for the calories needed to breastfeed. Our menu this week looks like this:
Monday – Moroccan-style chicken with roasted vegetable cous cous
Tuesday – Gammon with jacket potato and mangetout
Wednesday – Pizza with curly fries
Thursday – Spanish-style chicken and chorizo bake
Friday – Fish fingers, curly fries and spaghetti hoops
