I’ve been meal planning for quite some time and it’s probably one of the most consistent topics on my blog. As a busy mum, I don’t know how I would cope if I had to make runs to the supermarket every couple of days to pick up something for dinner!
Last week we stuck to plan in the main, although did end up with a takeaway from the local chinese restaurant on Thursday. That was definitely not planned, but came about because A wasn’t home until late and I was at my wits end! This week, I’ve got another two nights on my own with the boys whilst A is away with work again. It’s hard work and tiring, but I manage okay and quite enjoy having a bit of peace!
This week, our plan goes a bit like this…
Monday – Beef Stroganoff
Tuesday – Chilli con Carne
Wednesday – Fishfingers, curly fries and beans
Thursday – Spaghetti Bolognese
Friday – Chicken Korma
Saturday – Coq au vin
Sunday – Roast dinner with vegetables
